25 languages, but I don’t know which ones are included. At least Chinese isn’t included, and there’s nowhere to configure the language.”

Hey, Chase 👋. Sorry for the inconvenience. Yes, indeed, the app description didn't include a precise list of supported languages. Here it is: Supported Languages: Bulgarian (bg), Croatian (hr), Czech (cs), Danish (da), Dutch (nl), English (en), Estonian (et), Finnish (fi), French (fr), German (de), Greek (el), Hungarian (hu), Italian (it), Latvian (lv), Lithuanian (lt), Maltese (mt), Polish (pl), Portuguese (pt), Romanian (ro), Slovak (sk), Slovenian (sl), Spanish (es), Swedish (sv), Russian (ru), Ukrainian (uk). As you can see, unfortunately, Chinese is not supported yet. I'll try to find a model to support it in future releases 🙏.

Love the app but it is unusable for me because I can’t set it to hands free recording (listening without touching a key the whole time) and can’t set my own shortcut combination (option + space in my case)

I can say that hands-free mode and several new shortcuts, including option + space, will appear in the next update. P.S.
